7. Stuffed Cinnamon Streusel Muffins

These tender coffee cake muffins are topped with a buttery oat and pecan streusel, but the real surprise is hidden inside: a rich, gooey cinnamon center that's reminiscent of the best part of a cinnamon roll — the middle. Vietnamese Cinnamon brings robust flavor and aroma to the sweet, buttery filling. While a drizzle of the confectioners' sugar glaze is a welcome finishing touch, these cinnamon streusel muffins are just as delicious with only their crumbly top.
8. Chocolate-Pumpkin Crumb Cake

This tender pumpkin crumb cake is for people who double the chocolate chips in pumpkin bread and the streusel on coffee cake. Atop the thin layer of spiced pumpkin cake lays a heavy blanket of buttery crumbs with a bold chocolate flavor, thanks to Dutch-processed cocoa powder like Double Dark Cocoa or black cocoa. While there are three components to this recipe (crumbs, cake, and glaze), each comes together quickly and without a mixer. Gather napkins before digging in: As with all the best crumb cakes, the slicing and eating is the best kind of messy.
9. Easy Pecan Pie Bars

If you’re a fan of pecan pie at Thanksgiving, you’ll love these pecan pie bars. Not only are pecan pie bars faster and simpler to make than classic pecan pie, but they also serve a crowd and are perfect for baking in advance of the big day. Cristal Paredes, a baker featured in our Let Good Things Rise series, shared this recipe with us, and we haven’t been able to stop baking them since! Between the brown sugar shortbread crust and the honey-infused pecan pie topping, these bars have us hooked.
